Tonkatsu Bites with Slaw & Rice

This is a simple, fresh Japanese inspired dish. The perfect quick meal to whip up on a busy work week when you’re tight for time and want something tasty and nutritious for the whole family.

Serves: 4

Ingredients

400-500g boneless pork chops or belly slices

½ box Coat n Cook (Diamond)

Avocado Cooking Oil (Olivado)

2 cups Store bought Japanese slaw mix, with dressing

Japanese Barbecue sauce (Kikkoman)

Cooked Rice, to serve (we love Sun Rice)

Method

  1. Slice the pork into bite sized pieces. Place in a dish, and pour over 3 Tbsp of water.
  2. Sprinkle the coating mixture onto a plate, then take the wet pork pieces and coat well in the mix.
  3. Heat a generous amount of oil in a frying pan over medium high heat.  Shallow fry the pork pieces until golden on all sides and cooked through.
  4. To make Japanese style slaw, mix the slaw mix with the slaw sesame dressing.
  5. To serve, divide cooked rice between 4 bowls. Plate the slaw on one side, then lay the pork bites next to it. Drizzle with barbecue katsu sauce and serve immediately.
