Pasta with Tuna

With a tin of tuna and some frozen veggies this dish comes together in no time. Serve warm or cold.

Serves: 2

Ingredients

250g Diamond Spirals

1 can tuna - drained 

2 tablespoons DYC apple cider vinegar (or other vinegar you have on hand)

½ cup Mayonnaise (or plain yoghurt)

1 tablespoon olive oil

1 lemon - juice and zest 

¼ cup frozen peas, defrosted

1 can corn - drained or 1 cup frozen corn, defrosted

A handful of coriander or parsley from the garden 

Salt & pepper to taste 

Method

  1. Cook pasta according to the packet instructions. 
  2. Mix all the ingredients in a large bowl
  3. Season to taste 
  4. Serve warm or cold
