Pasta bacon and egg muffins

These bacon and egg "muffins" are great for lunchboxes!

Serves: 12

Ingredients

150g Diamond Fettuccine

200g Farmland Thin Sliced Streaky Bacon 

4 eggs

½ cup cream

¼ cup milk

Pepper, to taste

½ cup tasty cheese

Method

Grease a muffin tin with oil.

 

Cook pasta al dente. Drain and set aside.

Chop the bacon into small pieces.

Heat a large frying pan, add in the bacon and cook for 2-3 minutes. Set aside.

 

In a bowl, mix together the eggs, cream, milk and black pepper.

 

Fill up all your muffin tin holes with the fettuccine and bacon. Pour the egg mixture on top of the pasta and bacon. Sprinkle the cheese on top.

Bake in a preheated oven at 170C for 25 minutes till golden brown on top. 

 

Garnish with chutney or relish.
