Method
- Prepare the Diamond Macaroni Cheese according to the packet instructions and let it cool.
- Once cooled, combine the Macaroni Cheese, parsley, diced onion, cheddar, garlic, tomato paste, 1/2 cup breadcrumbs, salt, pepper, and the egg yolk in a blender. Pulse in short bursts until finely chopped (but not a paste).
- Shape the mixture into 6 sausage-like rolls.
- Whisk the egg whites in one bowl.
- Place 1 1/2 cups of breadcrumbs in another bowl.
- Dip each sausage into the egg white, then coat with breadcrumbs.
Shallow fry:
- Shallow fry for 8-10 minutes, turning frequently until golden brown on all sides.
To cook in an air fryer:
- Lightly spray each sausage with oil.
- Air fry at 200°C for 12 minutes or until golden brown and heated through.
