Meatless sausages

If you are trying to cut down on meat for health or budget recipes, then try these meatless sausages - we reckon they are pretty good!

Serves: 6

Ingredients

1 box Diamond Macaroni Cheese, prepared as per packet instructions

1/4 cup grated cheddar cheese

1 small garlic clove, crushed

1 small onion, diced

2 tbsp chopped Superb Herb parsley

1/2 cup plain breadcrumbs

2 tsp tomato paste

1/2 tsp black pepper

1/4 tsp salt

1 Better Egg, separated (yolk for mixture, white for coating)

1 1/2  cups plain breadcrumbs for coating

Oil for cooking

Method

  1. Prepare the Diamond Macaroni Cheese according to the packet instructions and let it cool.
  2. Once cooled, combine the Macaroni Cheese, parsley, diced onion, cheddar, garlic, tomato paste, 1/2 cup breadcrumbs, salt, pepper, and the egg yolk in a blender. Pulse in short bursts until finely chopped (but not a paste).
  3. Shape the mixture into 6 sausage-like rolls.
  4. Whisk the egg whites in one bowl.
  5. Place 1 1/2  cups of breadcrumbs in another bowl.
  6. Dip each sausage into the egg white, then coat with breadcrumbs.

Shallow fry:

  1. Shallow fry for 8-10 minutes, turning frequently until golden brown on all sides.

 

To cook in an air fryer:

  1. Lightly spray each sausage with oil.
  2. Air fry at 200°C for 12 minutes or until golden brown and heated through.
