Leftover pasta frittata

Ingredients

Leftover cooked pasta 

¼ head cauliflower, grated

¼ head broccoli, grated 

1 cup grated cheese

¼ cup chopped parsley

8 eggs, beaten 

Olive oil

Salt & pepper to taste 

Method

In a large bowl, combine leftover pasta, cauliflower, broccoli, cheese and parsley. Arrange the pasta mixture in a large skillet or a baking dish. Pour over the beaten egg, season with salt and pepper. Bake in the oven 200°C for 20-30 minutes until set and golden. Serve warm with side salad.
