Leftover Christmas Ham Mac & Cheese

This leftover Xmas ham mac and cheese is a WINNER. A very simple and quick dish to whip up on your boxing day hangover!

Serves: 6

Ingredients

1 packet Diamond macaroni 500g

2 cups cubed ham (we love Heller’s Xmas Champagne Leg Ham)

2 cups baby spinach (we love The Fresh Grower)

¼ cup sun dried tomatoes, sliced (we love Delmaine)
 

70g butter (we love Anchor )

70g plain flour

2 cups milk (we love Anchor )
1 cups grated parmesan cheese(we love Perfecto Italiano)

1 cup cheddar cheese
A handful flat leaf parsley (we love Superb Herb)

A handful of rosemary (we love Superb Herb)

Salt & Pepper
 

We love to serve this classic mac & cheese matched with crisp Giesen riesling. 

Method

  1. Bring a large pot of water to a boil. Add a good amount of salt. The salter is as salty as the sea!  Cook macaroni according to the packet instructions. Drain.
  2. Melt butter in a saucepan over medium heat.Stir in flour, salt, and pepper until smooth, about 3 minutes. Slowly pour milk into butter-flour mixture continuously stirring until mixture is smooth and bubbling for about 5 minutes. Add cheese, ham, spinach and sun-dried tomatoes. Mix well. Fold macaroni into the cheese sauce until coated.
  3. Top with more cheese and toppings and bake for 15-20 minutes until golden and crispy.
  4. Serve immediately.
