Crispy Air Fryer Mushrooms

Crunchy on the outside and juicy on the inside, these mushrooms are perfect as a side dish for a brunch or for dipping into your favourite sauce.

Serves: 4 as a side

Ingredients

3 size 7 Better Eggs
1 pack Diamond Coat ‘n Cook Original
400g 2 x packets Meadow Mushrooms white button mushrooms

For cooking
Dot’s Cooking Oil Spray

Serve with
Aioli or garlic mayonnaise
Lemon wedges 
parsley

Midea 8.5L Air Fryer with Cycloneair Technology (from Trade Depot)

Method

  1. Preheat the air fryer to 200C.
  2. Beat the eggs in a bowl. Tip the Diamond Coat ‘n Cook Original into another small deep bowl.
  3. Dip mushrooms in beaten eggs, then into the Coat ‘n Cook. Coat all the mushrooms this way and put on a plate.Spray with oil.
  4. Place a batch of mushrooms in the air fryer basket without touching each other. Cook for 6 minutes. Shake the basket and spray any dry looking patches with cooking spray. Cook for a further 6 minutes. Repeat with the remaining mushrooms.
  5. Serve hot with lemon wedges and aioli.
